Sweet Puddin' Time Mousse

This recipe is easily adaptable to enjoy as a parfait as well. Simply mix 2 cups crushed graham crackers with 1/2 stick melted butter, 1 teaspoon each of cinnamon and nutmeg. Layer mousse (before completely cooling) with the crushed graham crackers in as many layers as you like in parfait glasses, topping with additional dried cranberries. Cool completely.

1 cup milk

1 tablespoon unflavored gelatin

1 cup Bar Harbor® New England Style Indian Pudding

4 ounces cream cheese, room temperature

1/2 cup dried cranberries

1 tablespoon maple syrup

1 teaspoon lemon juice

1 teaspon molasses

Add milk to a small saucepan. Sprinkle gelatin over the top and let sit for 2 minutes to soften. Stir milk and gelatin to thoroughly blend. Turn on burner to medium and heat milk until it starts to scald, stirring almost constantly to prevent scorching. Remove from heat and whisk in the remaining ingredients well. Pour into a large bowl or 3-4 serving dishes and refrigerate at least 3 hours, or overnight, to thicken completely. You can loosely cover with film wrap when cooled. Before serving, sprinkle addional dried cranberries over the top of each serving.

Makes 3-4 servings
