Here's what you'll need to make this tasty, gluten-free, full-of-flavor side dish. Top with grilled chicken or Bar Harbor® All Natural Smoked Kippers and you have a delicious, gluten-free, nutrient-rich meal.

Ingredients:

1 teaspoon sea salt

1/4 teaspoon ground cumin

1/4 teaspoon ground black pepper

2 cups quinoa or brown rice

1/2 cup chopped pistachios

1/4 cup finely chopped fresh mint

1/4 cup finely chopped fresh parsley

Freshly grated lime zest, as needed

Directions:

Put 1 and 1/2 cups of water, the salt, cumin and pepper in a small pot and bring to a boil. Cook the quinoa or brown rice according to the package and then transfer to a bowl. Fluff with a fork and then add the pistachios, mint, parsley and lime zest to taste.
