Smoky Seafood Antipasto Salad

Once you have all the ingredients in front of you, there is no cooking, no fuss and certainly no lack of flavor. We are quite partial to this salad any time of year, but especially when enjoyed with friends and family around. This is a meal unto itself, with products from two great Downeast Maine companies, and needs no further complement.

8 ounces diced, smoked ham or chicken

1 apple, peeled, cored and diced

1 red bell pepper, seeded and chopped

1/2 cup cooked peas, cold

8 ounces salad mix, cut into bite-sized pieces

6 ounces Cheddar cheese, cubed

1 cup cannellini, butter or kidney beans, drained and rinsed

2 tomatoes, chopped

1/2 cucumber, peeld and sliced thin

(2) cans Bar Harbor®  All Natural Shelled Maine Mussels, drained

(1) can Bar Harbor® All Natural Chopped Clams, drained

Downeast Citrus Vinaigrette, recipe below

In a large salad bowl, combine all  ingredients. Add Downeast Citrus Vinaigrette, toss to combine and dole out among 4 serving plates.

Downeast Citrus Vinaigrette:

1/2 cup honey

1/4 cup apple cider vinegar

2 tablespoons lemon juice

2 teaspoons Raye's® Lemon Pepper Mustard*

3/4 cup extra-virgin olive oil

Salt and black pepper to taste

In a small bowl (or use a blender) whisk honey, vinegar, lemon juice and Raye's Mustard until well combined. Slowly whisk in the olive oil until emuilsified. Season to taste with salt and pepper. If using a blender, after pulsing the first 4 ingredients together, leave the top open to slowly drizzle in the oil to emulsify.
