Nonstick cooking spray

3 cups flour

1 cup sugar

1 tablespoons baking powder

1 (15-oz) can Bar Harbor® New England Style Indian Pudding

4  eggs

1/2 cup melted butter

1/2 cup apple sauce

3 tablespoons molasses

Crunchy Vermont Topping, recipe below

Preheat oven to 350-degrees F. Spray a jumbo 6 cup muffin tin with nonstick cooking spray or a 12-cup mini muffin tin.

Make the Crunch Vermont Topping by mixing together 1 1/2 cups crushed graham cracker crumbs with 1/4 cup maple syrup; set aside.

In a large bowl, combine flour, sugar and baking powder. In another bowl, whisk together Indian Pudding with any accumulating juice from the can, eggs, butter, apple sauce and molasses. Blend the wet with the dry until almost lump free.

Equally divide the batter among the prepared muffin cups to 3/4-full.

Top with equal amonts of the topping and bake 22-24 minutes, or until it springs back when touched.

Remove from oven to cool slightly before transferring to a rack or plate.
