A Maine Lumberman's Cheese Dip

This is a hardy cheese dip, fit for a Maine Lumberman. The flavor of Bar Harbor® Soldier Beans is so perfect with the ingredients listed, that this is a recipe for the books. I think you will find you should probably double this recipe because if not, you will be back in the kitchen making another batch before you are able to finish with the first batch.

1/2 (16-ounce) can Bar Harbor®  All Natural, Vegetarian Soldier Beans

1 cup desired beer, optional

1 cup grated Cheddar cheese

1/4 cup salsa

1 teaspoon dry mustard

Tortilla rounds or chips

In a large bowl, mash the beans, if desired, with a fork or pulse in a blender or food processor until paste-like but still chunky; set aside.

In a saucepan, heat beer over medium until boiling. Add the cheese and stir until melted, about 3-4 minutes. Reduce heat to low and fold in the salsa, mashed beans and mustard. Bring temperature to scalding and remove from heat to serve with tortilla chips.
