Clams Casino, The Maine Way

Although we're proud of the New England beginnings of Clams Casino, with its Rhode Island roots and served on the half-shell, we wanted to take a gamble. Are you ready to roll the dice? We made this a hearty version and substituted great smoked ham and our signature White Clam Sauce to give you a robust, flavor-packed version. We think you will agree that the table will be in your favor here.

4 squares prepared cornbread

2 tablespoons butter or margarine

1/3 cup diced onions

1/3 cup red bell pepper

1 (10.5-oz) can Bar Harbor® New England Style White Clam Sauce

1/4 cup grated Parmesan cheese

3 ounces smoked ham, diced small (crumbled bacon can be substituted)

1 (6.5-oz) can Bar Harbor® Whole Cherrystone Clams, drained

Salt and black pepper to taste

Put a square of cornbread on each of 4 serving plates.

In a large skillet over medium heat, melt butter. Add onions and bell pepper, cooking until they are tender but still crisp, stirring occasionally.

Add the clam sauce, Parmesan cheese and ham. Bring to boil, reduce heat to low and simmer 8 minutes, stirring once or twice.

Add clams and season to taste. Cook an additional minute or until the clams are heated through.

Heat the cornbread in the microwave until hot. Evenly divide clam mixture over each cornbread slice and serve immediately.
