Dear Bar Harbor,

I just made linguini with clam sauce using your chopped clams. I could cry, they are so good. I'm in Montana and the New England coast is so far away. How did you make them taste like home?

I grew up in an inlet in Rhode Island reading Blue Berries for Sal and taking family vacations to Maine. As you can guess, coastal seafood is in my veins. I returned this summer to visit my family and of course, we went to Maine. There in a little general store was your product. It caught my eye but I moved on.

A few weeks ago I was in Bozeman in Cost Plus World Market and there was your product in the import section. I looked at the can saw that the distribution is from Bar Harbor. What the heck, I said, and bought two cans of chopped clams.

These cans sat in my pantry staring at me. I didn't dare try them.

Tonight I came home with that "you-know-it-craving" for Linguini with Clam Sauce. My craving was initially followed by the usual disappointment: "you live in the Rocky Mountains, dummy." And then I thought of my two cans of clams. Could they be, at least not terrible?

I went to the cupboard and grabbed a can opener. Timidly I stood over the sink. Canned clams are never any good. In fact, quite often they are horrid. I stood there and opened the can...  no fishy smell.  A little sigh of relief... I looked in side, no grey-wilted parts; they were pink and fresh looking. Could they be this good? And then I tried them; they are excellent!

Happily I dumped both cans (and the juice) right into the pan and instantly the Rocky Mountains smelled like my family's New England kitchen.
